Notes

Step-by-Step Cooking Instructions

Step 1: Prepare the Gelatin

  1. Bloom the Gelatin: In a small bowl, sprinkle the unflavored gelatin over 2 tablespoons of water. Let it sit for about 5 minutes to bloom. This will hydrate the gelatin and prepare it for use.

Step 2: Whip the Cream

  1. Whip the Heavy Cream: In a large mixing bowl, pour in the heavy whipping cream. Using an electric mixer, whip the cream on medium-high speed until stiff peaks form. This usually takes about 3-5 minutes. Be careful not to overwhip, as it can turn grainy. Once done, set aside.

Step 3: Make the Mousse Base

  1. Beat the Cream Cheese: In another mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  2. Add Dulce de Leche and Sugar: Mix in the dulce de leche and powdered sugar until well combined and smooth. Scrape down the sides of the bowl as needed.
  3. Add Vanilla Extract: Stir in the vanilla extract to enhance the flavor.

Step 4: Incorporate the Gelatin

  1. Melt the Gelatin: Gently heat the bloomed gelatin in the microwave for about 10-15 seconds or until melted. Make sure not to boil it. Allow it to cool slightly.
  2. Combine with Mousse Base: Slowly add the melted gelatin to the dulce de leche mixture, stirring constantly until fully incorporated.

Step 5: Fold in the Whipped Cream

  1. Gently Fold: Take one-third of the whipped cream and fold it into the dulce de leche mixture to lighten it. Once combined, gently fold in the remaining whipped cream until no white streaks remain. Be careful not to deflate the mixture, as the air is essential for the mousse's light texture.

Step 6: Chill the Mousse

  1. Transfer to Serving Cups: Spoon the mousse into individual serving cups or a large serving bowl.
  2. Chill: Cover the cups with plastic wrap and refrigerate for at least 2-3 hours or until set.

Step 7: Serve

  1. Garnish: Before serving, drizzle additional dulce de leche on top of the mousse. You can also add a dollop of whipped cream and sprinkle chocolate shavings or cocoa powder for an elegant touch.
  2. Enjoy: Serve chilled and indulge in the creamy, sweet delight of Dulce de Leche Cloud Mousse!
